Recipe: Burdock Daikon Carrot Pork Soup (牛蒡蘿蔔瘦肉湯)

Ingredients
  • 1lb of burdock root (also called gobo, or just burdock)
  • 1 lb of daikon
  • ½ lb of carrot
  • 1 lb of lean pork marinated with salt
  • 2 slices of ginger root
  • 10 cups of water
  • ¼ tsp salt for seasoning as desired
Instructions
  1. Cut the pork to ¼ inch thin slices. Boil a small pot of water to blanch the meat. Set aside meat when done.
  2. Boil 10 cups of water in a larger soup pot. When ready, add the ginger and blanched pork. Cover and cook on high heat until it boils. Then turn the heat to Low and simmer for 30 minutes.
  3. Meanwhile, wash, peel, and cut all vegetables to ½ inch thick slices.
  4. After cooking the meat for 30 minutes, add all ingredients, except for the salt, to the soup pot. Cook on high heat until it boils. Then turn the heat to Low again and simmer for 1 hour.
  5. When done, sprinkle in the salt as desired to season. Serve while hot.
